1/2 cup fresh lime juice

1/2 tsp. freshly grated orange zest

1/2 cup extra virgin olive oil

1 tbsp. Dried oregano

2 tbsp. Cumin

8 large cloves garlic

Ingredients for grilling

4 whole live lobsters

1 tsp. Freshly grated lime

1/2 tsp. freshly grated orange zest

2 tbsp. Extra virgin olive oil

Kosher coarse salt,

Kosher freshly ground black pepper

1.Clean up the lobsters with toothbrush, and rinse them under the tape. Halve the lobsters with kitchen scissors and cut the tail through the back where the hard part of the shell is. Fold their tails just like a book. Remove the vein which is dark or clear. If your prepared lobsters is spiny, you can halve the lobsters horizontally and remove the vein. Whisk olive oil on the cut part of the lobster. Season with kosher salt and pepper. Drizzle lime and orange juice.

2.Thinly sliced the garlic crosswise. Preheat the grill over medium heat, almost 350 °F. place a deep saucepan on the grill, and heat the olive oil. When it sizzles, add cumin and garlic. Toss occasionally and it takes about 2 minutes to turn fragrant and yellow brown. Mix water, salt, oregano, pepper, orange and lime juices. Stir them evenly in a rolling boil. Season kosher salt or lime juice. Then transfer to a medium bowl. Chill to room temperature and add mint. Stir evenly.

3.Heat the grill all the way up to high. Place a piece of grill mat on the grate to prevent grease from sticking.

4.Transfer the lobster tails with cut side down to the grill mat. It takes about 4 minutes for the meat to turn slightly brown.

5.Flip the tails of the lobsters and drizzle some of the sauce. It also takes about 4 minutes for the lobsters grilled well. You can check the doneness by using a poke, if the meat is firm, the lobsters is cooked well. Or you can see the shell of the lobsters turn dark red and grill another 1 -2 minutes.

6.Drizzle a tbsp. Sauce over the lobster and sprinkle the remained mint before serving.
