BBQ Recipe: Grilled Chicken Drumsticks with Savory Caramel

Drumsticks, whether grilled or otherwise, are just awesome. You can’t imagine living without a regular dose of this yummy dish. Isn’t it?  With this special chicken recipe involving caramel, you are definitely going to enjoy the chicken drumsticks even more. The best part is that these drumsticks are going to be grilled, not fried, so you won’t have to face the calorie intake issue as well. Then let’s have a look at the ingredients and then the complete recipe.

Ingredients:

With these ingredients, you can expect to serve four individuals.

  • 12 chicken drumsticks (large pieces)
  • Vegetable oil
  • 4 Garlic cloves (grated)
  • ¼ cup sugar
  • ½ cup vinegar
  • 4 tablespoon fish sauce
  • 4 teaspoon red pepper flakes (for spicy taste)
  • ½ teaspoon black pepper (freshly ground)
  • 1 teaspoon cumin (freshly ground)
  • Salt to taste

Directions:

In order to prepare the wonderful recipe, you’ll have to follow the steps mentioned below:
  1. Make your grill ready for use.
  2. Preheat your grill over medium high heat. And put a BBQ grill mat on the grill to prevent from sticking and keep from falling through.
  3. Put some oil on the BBQ grill mat.
  4. Mix all the ingredients that are mentioned above, including garlic, sugar, vinegar, red pepper flakes, black pepper, and cumin. Add some water in these ingredients and boil them in a saucepan.
  5. Make sure that your mixture reduces to one half while boiling.
  6. Let it cool to room temperature.
  7. Once it reaches the room temperature, add this mixture in fish sauce.

Note: don’t forget to divide this mixture into half.

  1. Transfer one half for serving a purpose.
  2. Meanwhile, season your chicken drumsticks with salt.

Note: you can keep your chicken with salt for 2-4 hours or more if you have enough time.

  1. Once everything is ready, place your chicken drumsticks over indirect heat. Make sure to cover the grill with a vent.

Note: this would only be possible if you have this functionality available in your grill.

  1. You’ll have to grill your drumsticks for 20-30 minutes, changing sides twice.
  2. After the drumsticks are properly cooked, move them to the hotter part of the grill and continue grilling for another 6-8 minutes.
  3. While moving the drumsticks to the hotter part of the grill, start adding bits of the sauce to the chicken. It will give the drumsticks the right taste and color.

Note: the smell and the color of the drumsticks will tell you when they are fully done. Otherwise, grilling for 6-8 minutes after moving it to the hotter part of the grill, and they’ll be perfectly done.


Serving:

For the best taste, serve these Grilled chicken drumsticks with savory caramel with the half sauce that has been set aside initially. Apart from being the main course in your dinner, these drumsticks can also work as a snack or a starter. It depends on your choice.
