Grilled Bavette Beef with the Combo of Smoky Salad Onions

Bavette, the French word used for the flank streak, having a juicy taste, loosely textured meat, flat cut steak taken from the underbelly of the cow. A beef bavette is cut of meat from the well-exercised abdominal muscle that makes it pretty tough to chew. Thus, you should cook the meat after recommended margin, this helps to make the meat tender and moist.   

The majority of us find bavette as the yummiest cuts of beef around. Though, you are not supposed to have this meat piece to be melted in the mouth. You need to chew the beef slightly to enjoy the tenderness and juiciness of the meat. But if done right, bavette beef can be the mouth-watering dish for the day. With the grilled Beef Bavette, the combo of smoky onions and crunchy salad goes perfect. This will definitely make it a challenge for you not to lick your fingers after eating.


Ingredients

Beef Bavette

3 to 4 pieces (100 g each) thinly sliced

Brine

1 quantity (for red meat especially)

Extra virgin olive oil

100 ml (approx. 1/3 cup)

Olive oil

For cooking

Garlic cloves

2 pieces (chopped)

Red chilli

1-2 small (finely chopped)

Lemon zest

1 (finely grated)

thyme leaves

1 tbsp.

Salad onions (spring onions)

8 large

Crunchy Shallot

1 piece

sea salt and black pepper

As per taste

Directions:
1. Firstly, you need to cook Beef Bavette. Properly dip the piece of beef in the brine water. You need to leave the meat it for minimum 2-3 hours. 
2. Drain the brine water, now place beef cut in a clean bowl. Now, prepare the mixture for dressing the beef Bavette.
3. Now, you need a mixing bowl. Add ingredients in mixing bowl; including thyme leaves extra virgin olive oil, garlic, lemon zest, and chilli and mix them. Add this mixture with the piece of meat and set it for margin. Now, leave it for 60-minutes minimum.
4. It’s time to prepare the grill. Light the barbeque stove and set the flame. Don’t forget to place the non stick grill mat first. To grill mat, non stick grill mat can prevent from sticking and leave no mess for your grill so that you don't need to spend too much time cleaning your grill. Cleaning non stick grill mat is just like a breeze.

5. Remove the Bavette from the mixture, sprinkle a pinch of salt and pepper on the beef. Save the remaining mixture aside. Set the beef bavette for grilling. 
6. Keep a close eye on the meat cut. The cuts of beef are thin; this means they will be cook quickly. Don’t cook it too much or else it will be tough and dry or bland. You need to cook the meat for 3-4 minutes from each side of the meat. Check the color of the meat, it will be done, when having grilled color of the beef’s skin. Remove the beef Bavette from the grill and place it aside to cool down. 
7. Now, cut the onion in two prices, lengthwise. Dish out the steak cut intact in the platter. 
8. Toast the cut onion in olive oil for a minute or two. Season the onion with salt and black pepper as per the taste. Sauté the onion until done. 

9. Serve the sauté and remaining seasoning sauce in the platter, along with the grilled Beef Bavette.
