What can beat a good old traditional fajita salad! What a treat it would be if there a twist of charcoal and grill with it! It’s like a soul given to a boring dish and uplifting it to the next level.  

Grilled Chicken Fajita Salad is what will make your parties elevated and memorable! Not only it tastes delectable but offers low-carb as well. Sprinkles of cilantro at the top and side with lime wedges will make this a picture-perfect and mouth-watering dish.


I would suggest you serve it with a side dish of Grilled Corn with Cilantro Lime Butter. This would definitely raise the bars!

Ingredients you need for
Grilled Chicken Fajita Salad are:

Chicken breasts, skinless and cut in strips

1 pound

Fajita marinade, liquid

1 (12 ounces)

Vegetable oil

2 tablespoons

Garlic clove, minced

1

Kosher salt

½ teaspoon

Black pepper, ground

¼ teaspoon

Bell peppers, 1/4-inch strips

Onion, 1/4-inch strips

½

Romaine lettuce

2 heads


Directions:

Step 1:

Mix well the liquid fajita marinade with chicken strips in a large bowl and let it sit and marinate for about an hour to even overnight or better flavor infusion. Keep it in the refrigerator in the meanwhile.

Step 2:

Prior to start cooking, preheat your grill on a medium to high heat with lightly greased grill with any cooking oil of your choice.  

Step 3:

Mix all the spices, salt, pepper, minced garlic with some oil in a large bowl.

Step 4:

Take the cleaned and dried head of romaine lettuce and cut it into half vertically. Brush all over romaine lettuce with the oil-garlic mixture.

Step 5:

Then add the striped onions and shredded peppers along with the oil-garlic mixture and toss it thoroughly to combine and inject the flavors properly.

Step 6:

Spread the marinated chicken uniformly on the BBQ grill mat to prevent from sticking and falling through the grill grate. If you don’t have one then you can insert the vegetables and marinated chicken on skewers.


Step 7:

Grill the chicken for about 5 minutes. Flip the chicken in the basket and add vegetables to it.

Step 8:

Grill that for about 10 minutes. Check for the temperature of chicken until it reaches 74 degrees C. You can check the temperature by inserting an instant-read thermometer into the chicken.

Step 9:

Make a bed of grilled romaine lettuce over the plate and place the grilled fajita chicken and smoked vegetables evenly across the plate.

Instructions for Sideline: Grilled Corn with Cilantro Lime Butter (optional):

· All you need is corn, cayenne pepper, fresh lime juice and chopped fresh cilantro

· Mix the cilantro, cayenne pepper and lime juice into cream butter thoroughly. Leave for an hour.

· Grill the pre-soaked corn for about 20 minutes and serve it with cilantro lime butter.


And voila! You have a perfect and soothing meal to rock a party!
