Grilled Turkey Drumsticks with Chipotle Glaze and Butter-rub corn on the Cob
These basted and barbecued turkey drumsticks are glazed with chipotle sauce and served with onion-y buttered sweet grilled corn on the cob.
Ingredients for Turkey Drumsticks
8 pieces Turkey drumsticks
1 cup/250ml Molasses
1 cup/250ml Salt
1 tablespoon/15ml Black peppercorns
2 Lemons, sliced
2 Onions, quartered
1 head garlic, cloves separated and smashed
1 large bunch Fresh rosemary
Salt and freshly ground black pepper for seasoning
Melted butter for brushing
Canned chipotles in adobo sauce, pureed for brushing
Ingredients for Corn on the Cob
2 teaspoons Lime zest
1 teaspoon Chipotle chili powder
Granulated garlic 1 teaspoon
1 teaspoon Sweet paprika
1/2 teaspoon Kosher salt
1/2 teaspoon Sugar
1 stick Unsalted butter, at room temperature
4 ears Corn on the cob
1)Non-stick BBQ grill mat
Cooking Directions: Grilled Turkey Drumsticks with Chipotle Glaze
STEP 1: Prepare Turkey Drumsticks
1)Take a deep and large non-reactive pan. You can also use a cooler or a bucket.
2)Pour 1 cup (250ml) hot water into the pan.
3)Add molasses and salt. Stir until the salt dissolves completely in the water.
4)Add lemons, peppercorns, rosemary, garlic and onions to the brine.
5)Next, add turkey drumsticks and immerse them in 8 cups of cold water (2 liters). Refrigerate overnight or at least 6 hours.
STEP 2: Prepare Charcoal Grill
1)Remove the turkey from the refrigerator and drain the brine. Let the drumsticks dry thoroughly.
2)Season the dried turkey drumsticks with some salt and pepper.
3)Prepare a charcoal barbecue for indirect cooking. Alternatively, you can use a gas grill.
4)If you want to use a charcoal grill, then put 10 to 12 briquettes on only one side of the barbecue. Heat up to 400 degrees Fahrenheit (200 degrees Celsius).
STEP 3: Grill Turkey Drumsticks
1)Place a non-stick BBQ grill mat over the charcoal grill.
2)On the opposite side of the charcoal, place the turkey drumsticks one by one.
3)Brush the turkey drumsticks with melted butter and cover with a lid.
4)Cook the drumsticks for 2 hours, turning and basting them with butter every 30 minutes.
5)Insert a thermometer into the thickest part of the turkey thigh. The reading should show 160 degrees Fahrenheit (75 degrees Celsius).
Brush the turkey drumsticks with pureed chipotles before serving.
Cooking Directions: Corn on the Cob with Butter Rub
These smoky and spicy grilled corn cobs will add another dimension to your barbecued turkey drumsticks.
1)Preheat the non-stick BBQ grill mat.
2)Take a small bowl and add paprika, lime zest, garlic, chipotle powder, sugar and salt and mix well with a fork.
3)Add the butter until it is thoroughly combined with the spices.
4)Peel back the husks from the corn and remove the silks from the corn, but do not completely remove the husks.
5)Brush butter generously over the corn and fold back the husks over them.
6)Grill the corns over medium heat for 12 to 15 minutes, until they are cooked through and bright yellow.
