Barbecued Buffallo Chicken Thighs with Wedged Ranch Salad

Try this classic and incredibly delicious chicken thigh recipe served with a spicy buffalo sauce, soft and buttery ranch dressing and fresh iceberg lettuce. This recipe can be prepared in less than an hour and is perfect for a summertime barbecue with friends and family. 

Ingredients for Chicken Thighs

Whole chicken thighs

12 pieces

Sea salt flakes 

1 tbsp

Smoked paprika 

1 tsp

Garlic granules 

1 tsp

Garlic 

4 cloves, finely chopped

Unsalted butter 

150g

Dried oregano 

1 tsp

Tabasco sauce 

125ml

Gherkins/pickles 

For serving purposes

Special Equipment
1)BBQ grill mat

Cooking Directions 
STEP 1
1)Take a small bowl and add sugar, salt, garlic granules, paprika and oregano. Mix well. 
2)Take a baking dish and put the chicken thighs on it, sprinkling them with the salt-and-spice mixture that you prepared. Rub the mixture thoroughly around the chicken.
3)Leave the thighs to marinate for 1 to 4 hours. 

STEP 2
1)Prepare a barbecue fire with the charcoals banked up on one side. 
2)Place the marinated chicken thighs, skin side down, on a BBQ grill mat and grill over the charcoals for 5 to 10 minutes or until nicely golden and charred. 
3)Move the chicken thighs to an indirect flame and cook, covered, for 35 to 40 minutes longer. 
4)Turn and move the chicken thighs every 5 minutes until they are cooked through. 

STEP 3
1)Meanwhile, take another small bowl and add mayonnaise, white wine vinegar, soured cream, Worcestershire sauce, garlic granules, herbs and a pinch of seasoning in a bowl. Whisk well. 
2)Chill the salad. 
3)Pack in the lettuce and chill again. 

STEP 4
1)Take a small frying pan and melt the butter. 
2)Add the chopped garlic and fry gently for 3 to 4 minutes until it starts smelling fragrant. 
3)Tip the fried garlic in the Tabasco sauce. Pour the mixture next into a large bowl. 
4)When the chicken is done, tip the thighs into the buffalo sauce. Toss nicely. 



Serving Suggestion
Smother the chicken in ranch dressing and sprinkle chopped hazelnuts on top. Serve the buffalo chicken thighs hot with the wedged lettuce and pickles on the side. 

Alternative Method for Preparation/Cooking
If you do not have time to grill the chicken thighs, then you can use a gas burner/oven:

1)Heat the oven to 20C/fan 200C/gas 7. 
2)Take an oven tray and place the chicken thighs on top of it. 
3)Drizzle the thighs lightly with oil. Roast the chicken for 45 minutes until charred and cooked through. 
4)Remove from the oven. 
5)Toss some buffalo sauce and follow the serving suggestion given above.
