Grilled Veggie-loaded Burgers

Here is the ultimate grilled vegan burger recipe for our vegan enthusiasts and food lovers alike. These completely veggie-loaded burgers have a meaty texture and a full flavor that is as good as any non-vegetarian burger recipe. Suitable for grilling on a lovely summer day, these grilled vegan burgers are an absolute must at any garden barbecue party! 

Ingredients for Vegan-loaded Burgers

Cooked brown rice 

100g from a pouch

Black beans 

400g tin, rinsed and drained well

Onion 

1, finely chopped or grated

Smoked paprika 

1 tsp

Fennel seeds 

1 tsp, crushed

Garlic salt 

½ tsp

Flat-leaf parsley 

finely chopped to make 1 tbsp

Panko breadcrumbs 

25g

Ingredients for Pickled Onions

Red wine vinegar 

2 tbsp

Golden caster sugar 

2 tsp

Red onion 

1, finely sliced

Ingredients for Chipotle MAYO

Avocado 

1, peeled and stoned

Red onion 

1/2 small, finely chopped

Lime 

1/2, juiced

Chopped coriander 

1 tbsp

Red chili 

1/2, finely chopped

To Serve

Vegan burger buns

4, halved

Beef tomato slices

As many as you need

Curly lettuce leaves

As many as you need

Mustard

As many as you need

Ketchup

According to taste


Special Equipment
1)Non stick grill mat
2)Stick blender or machine blender
3)Baking sheet

Cooking Directions 
STEP 1: Pickled Onions
1)Take a small bowl and add vinegar and sugar with a bit of salt and let the sugar dissolve. 
2)Add the onion. Cover the bowl and leave aside to pickle. 

STEP 2: Chipotle Mayo
1)Take a bowl and mix all the ingredients of the chipotle mayo and sprinkle with a pinch of sugar. You can either use a machine blender or a stick blender to whizz the mayo smoothly. 
2)Add 2 tablespoons of olive oil and whizz again until it looks like mayonnaise. 
3)Season and tip the dip back into the bowl. Cover and chill. 

STEP 3: Burgers
1)Take all the ingredients of burgers and pour them into the blender. Pulse blend until they are combined well. 
2)Divide the mixture into 4 parts and shape them into burger patties. 
3)Place the non stick grill mat and place the burger patties on it. Chill for at least 30 minutes, or until you need them. 

STEP 4: Grill the Patties
1)Prepare a wood or charcoal barbecue fire. 
2)Take a non stick grill mat and heat it high on the barbecue. 
3)Take some olive oil and brush the burger patties. 
4)Place the burger patties on the non stick grill mat and cook for 3 minutes. Flip and cook for another 3 minutes to have a good crust and texture (tip: avoid keep moving or flipping the patties or they will break easily). 

STEP 5: Assemble the Burgers
1)Place the burger buns on the non stick grill mat and char lightly. 
2)Next, take a dollop of the chipotle mayo and spoon the burger base. 
3)Add a few fresh and crunchy lettuce leaves.
4)Add the burger patty on top of the lettuce layer, then pour a spoon of guacamole and a few drained pickles onions. 
5)Add another layer of mayo on top with some slices of tomatoes. Place the top side of the bun and secure the sandwich with a skewer if you need. 



Serving Suggestion
Serve with ketchup and some mustard toppings.
