Spicy Grilled Chicken With Cilantro Lime Butter And Maryland Corn Pops

Ingredients for Spicy Grilled Chicken:

Chicken breast halves

6 bone-in pieces (8 ounces each )

Chilli powder

1 tablespoon

Ground cinnamon

2 teaspoons

Brown sugar

1 tablespoon

Baking cocoa

1 teaspoon

Balsamic vinegar

1 tablespoon

Salt

1/2 teaspoon

Pepper

1/2 teaspoon

Olive oil

3 tablespoons

Ingredients for Cilantro Lime Butter

Butter

1/3 cup; melted

Fresh cilantro

1/4 cup; minced

Red onion

2 tablespoons; finely chopped

Lime juice

1 tablespoon

Serrano pepper

1 piece; finely chopped

Pepper

1/8 teaspoon


Ingredients for Maryland Corn Pops :

Medium ears sweet corn

8 pieces; husks removed

Mayonnaise

1-1/2 cups

Canola oil

2 tablespoons

Freshly ground pepper

1/4 teaspoon

Garlic powder

1-1/2

Crumbled feta cheese

2 cups

Seafood seasoning

2 tablespoons

Fresh cilantro

1/4 cup minced

Lime wedges

Optional

Special Equipment
1)Corncob holders
2)Disposable gloves
3)Grill Cooking Mat

Cooking Directions 
Prepare Grilled Chicken 
1)Take a small bowl, mix chilli powder, brown sugar, ground cinnamon, baking cocoa, olive oil, balsamic vinegar, salt and pepper. Brush the prepared mixture over the chicken.
2)Place skin-side of the chicken on a grill cooking mat. Cover and grill the chicken over indirect medium flame for 15 minutes. 
3)Turn once and grill for another 20-25 minutes or until the thermometer shows a reading of 165°.

Prepare Cilantro Lime Butter
4)Meanwhile, take another small bowl and mix all the ingredients of Cilantro lime butter well. 
5)Drizzle the butter over the chicken before serving. 

*Caution: Use disposable gloves when slicing hot peppers as the oils can affect your skin. Avoid contact with your eyes and face. 

Prepare Maryland Corn Pops
1)Take the corn ears and brush all sides with oil. 
2)Heat the grill cooking mat and grill the ears, covered, over medium heat. Turn occasionally. Grill until soft and lightly browned. 
3)Remove the corn earns and let them cool slightly. 
4)Cut the ears of corn into thirds each. 
5)Insert a corncob holder into each piece of corn ear. 

Prepare Mayonnaise Dip
1)Take a small bowl and pour mayonnaise. Add garlic powder and pepper. 
2)Spread corn on the cobs with the dip. 
3)Sprinkle some cheese, cilantro and seafood seasoning. 
4)Serve with lime wedges if desired. 



Tips for better results: 
-Grilled chicken made in this way will give you a slight taste of the classic mole flavor. Mole is a Mexican sauce that is prepared in many different ways but carries the distinct flavors of cocoa, cinnamon and cumin. 
-Using bone-in chicken will give you a juicier, tender and more flavorsome chicken than boneless chicken breasts. 
-You can shred any leftover chicken to make some quick-fix delicious tacos later.
