The scent of this form of barbecue can be picked up from a decent amount of distance, causing those in the vicinity to hunt down the cook himself, and partake of the banquet.

Barbecue and grill recipes play a vital role in the Southern American cuisine, which is notorious for its savory and rich flavor. 

While barbecue is known for its signature wood (or charcoal for that matter) smoke, open-air and outdoors, some barbecue recipes are simple yet smashingly tasty, and can be prepared indoors using the barest of equipment and with the minimum of ingredients. Today we are going to share with you a special recipe from Texas, a saucy and tangy barbecued chicken that is easily prepared at home and is an excellent choice if you feel like having a barbecue but do not want to go over the top with the preparations.

Ingredients that you will need:
Fryer/broiler chicken
2 whole (3 – 4 lbs each); Cut into 8 pieces each
Salt and pepper

Barbeque Sauce 
2 tablespoons canola oil    
2 small, finely chopped onions
¼ cup lemon juice
2 cups ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
½ teaspoon garlic powder
¼ pepper
1/8 teaspoon salt
2 tablespoons water
1/8 hot pepper sauce

Special Equipment that you will need
Non stick grill mat

Cooking Directions 
Prepare Chicken
1)Sprinkle salt and pepper on chicken.
2)Grease a non stick grill mat or a grill rack, and grill the salted and peppered chicken pieces, skin side down and uncovered over medium heat for 20 minutes. 
Prepare Barbecue Sauce
1)Take a small saucepan and heat oil over medium heat. 
2)Add the chopped onions in the saucepan and sauté until they are tender. 
3)Add the remaining sauce ingredients in the pan and bring to boil. 
4)Reduce the flame and let the sauce simmer, uncovered, for 10 minutes more. 
Back to the Chicken
1)Turn the chicken pieces over. 
2)Brush the turned side with the barbecue sauce that you have prepared. 
3)On the non-stick grill mat, grill the chicken pieces for 15 to 25 minutes longer. 
4)Brush the pieces frequently with the sauce so that the flavors seep in perfectly. 
Use a thermometer to check the temperature. It should read 165° when inserted in the breast and 170° to 175° when inserted in the thigh.
