Sizzling Barbecued Chicken From Texas

Ingredients that you will need:
2 whole (3 – 4 lbs each); Cut into 8 pieces each
Salt and pepper
2 tablespoons canola oil
2 small, finely chopped onions
¼ cup lemon juice
2 cups ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
½ teaspoon garlic powder
1/8 teaspoon salt
2 tablespoons water
1/8 hot pepper sauce
Special Equipment that you will need
Non stick grill mat
1 serving contains:

15g carbohydrates (14 sugars, 0 fibers)

1)Sprinkle salt and pepper on chicken.
2)Grease a non stick grill mat or a grill rack, and grill the salted and peppered chicken pieces, skin side down and uncovered over medium heat for 20 minutes.
Prepare Barbecue Sauce
1)Take a small saucepan and heat oil over medium heat.
2)Add the chopped onions in the saucepan and sauté until they are tender.
3)Add the remaining sauce ingredients in the pan and bring to boil.
4)Reduce the flame and let the sauce simmer, uncovered, for 10 minutes more.
Back to the Chicken
1)Turn the chicken pieces over.
2)Brush the turned side with the barbecue sauce that you have prepared.
3)On the non-stick grill mat, grill the chicken pieces for 15 to 25 minutes longer.
4)Brush the pieces frequently with the sauce so that the flavors seep in perfectly.
Use a thermometer to check the temperature. It should read 165° when inserted in the breast and 170° to 175° when inserted in the thigh.
