Sides Dishes to Serve with Grilled Meat
Barbecue really makes us full of joy, summer is really a perfect season to grab some of your friends together to barbecue backyard. As a chef, only main course is not enough. You need to concern about the side dishes to get along with your grilled meat. A hot potato salad or cabbage are good choices as side dish. There is a traditional German recipe for a hot potato salad and a recipe for cabbage.
Recipe for hot potato salad
8 Russet potatoes
1 pound bacon
3 to 4 ribs of celery
1 large onion, diced
3 tablespoons flour
11/2 cups water
1 cup cider vinegar
½ cup sugar
1.Cube and parboil the potato cubes until they are cooked, but firm. Drain.
2.Lay the bacon on a broiler sheet and bake at 350 degrees for about 35 minutes. Once the bacon is cooked, chop it coarsely with a sharp knife. Drain off about a cup of the bacon fat into a skillet, add the celery and onion to the skillet and cook until soft.
3.Add the flour and stir in with a spoon and then add the water and the vinegar, stirring constantly until the mixture thickens and starts to bubble. Add the sugar, salt and pepper and stir.
4.Put the potatoes and the bacon in a three-quart casserole dish and stir together. Add the celery and onion mixture and stir it into the potatoes. Bake uncovered in a 350-degree oven for 30 minutes. Serve hot.
Recipe for cabbage
Cabbage is also a wonderful dish to serve with grilled meat. This recipe is one that can be served hot or cold.
1 head green cabbage
1 onion, finely chopped
1 cup chicken broth
Red pepper flakes
2 tablespoons sugar
1 teaspoon salt
1.Quarter the cabbage, cutting out the core and slicing the wedges into fine slices with a sharp knife.
2.Put a pool of oil into a wok over a high heat. Once the oil is shimmering, toss in the garlic and red pepper flakes (one to two tablespoons of each, depending on your tolerance of spicy heat and your appreciation of garlic). When you toss the garlic and pepper flakes in the hot oil, avert your head because they will smoke.
3.Stir for about 30 seconds add the chopped onions, cook for about two minutes and then add the cabbage, stirring to coat the cabbage with the oil and pepper flakes and garlic. Cook for about two to three minutes, add the chicken broth, the sugar and the salt and stir again.
4. Cover the wok and let the mixture simmer for about five to seven minutes to soften the cabbage.
5.Once the dish is cooked, it can be served hot. Or you can put it in a container and place in the refrigerator to chill and then serve cold. A cold cabbage dish with a spicy hot flavor is a wonderful combination of sensations in your mouth and a nice cold dish to serve on a hot summer day.
